Crustless Apple Pie
Peel, cut and core 5-6 large Granny Smith, Fuji or Gala apples. I have a great apple peeler that cuts and cores at the same time. Then mix in 2 teaspoons of Cinnamon, 2 teaspoons of lemon juice, 1 teaspoon vanilla extract and 2 rounded tablespoons of flour. Pour apples into a large 9 inch glass pie dish that has been lightly sprayed with cooking oil.
Next, mix the following topping ingredients and pour on top of the apples.
1/4 Cup Melted Butter
1/2 Cup Packed Brown Sugar
1/2 Cup Quick Oats
1/2 Cup Flour
1/8 Teaspoon Baking Soda
1/8 Teaspoon Baking Powder
Bake pie in a preheated 350 degree oven for about 35 minutes or until bubbly and brown.
